Embrace No-Cook Dinners

Too hot to turn on the stove? Summer is the perfect opportunity to be lazy with simple no cook meals. Perfect for busy weeknights. The best time for salad is in the summer. Make a big salad with fresh greens [I like mixing kale or spinach with punchier greens like arugula], beans like chickpeas, toss in a bunch of vegetables like red peppers, and even some fruit like strawberries or mangoes like in this salad. Toss everything together in a simple vinaigrette.

Another option if you’re watching your weight is to have a meal replacement smoothie like this fat burning Pineapple Ginger Smoothie.

When You Do Cook, Keep It Simple

Some of my fav low maintenance weeknight meals include lettuce wraps like these ones, flatbread loaded with pesto and fresh veggies like zucchini and mushrooms or a veggie burger. This smoky eggplant burger is one of my favs!

Bring on the No Bake Summer Desserts

Berries are the best summer fruit with a multitude of possibilities. Throw some on top of yogurt or blend berries with some coconut water to make homemade popsicles. If ice cream is what you’re craving enjoy frozen pineapple and mangoes in this Golden Milk Ice Cream.

Layer Like a Boss

When you hear layers it typically means bundling up from the cold but in summer it’s all about layering foods like an outfit – think greens, quinoa, beans (or meat) and nuts – things you can assemble vs feeling pressured to follow a recipe. Cook some quinoa, roast some veggies, toss in some beans or meat and voila – dinner is served. I also recommend making in big batches so you can layer throughout the week or double up on lunches.

Don’t Completely Deprive Yourself

Whether you’re trying to lose weight or eat healthier it’s important not to deprive yourself. This typically leads to overeating later on. Instead find ways to eat your favourites in a healthy way. If you like to enjoy cocktails here’s some inspiration on how to lessen the damaging effects of alcohol with superfood ingredients.
