They are just bursting with juicy lemon, and the coconuts and almonds are such a harmonious balance.
You can blend these in either a food processor or blender. I use my Ninja for EVERYTHING so I threw everything in there.
When you’re ready to roll into balls, you’ll want to pack them into your hand as tightly as possible to prevent them from falling apart.
Roll into balls about the size of quarter and then roll in shredded sweetened coconut.
Place them on a tray or plate and refrigerate until firm about 1 hour.
Easy. Peasy. Boom.

What’s your favourite lemon dessert?
- 2 ¾ cups sweetened shredded coconut
- ½ cup natural unsalted, unroasted almonds
- 2 tbsp honey
- 2 tbsp coconut oil
- 1 large lemon – juice and zest
- Place all ingredients except ¾ cup shredded coconut into your food processor or blender in the order listed above.
- Pulse until the mixture is smooth. Be careful not to pulse too much or else you’ll end up with butter.
- Shape the mixture into balls about the size of a quarter.
- Place ¾ cup shredded coconut on plate and roll in coconut.
- Place on a tray or large plate and chill in the fridge until firm, about 1 hour.
